Spanish cuisine is one of the main founders of the Mediterranean diet. In fact, Spanish cuisine consists of many regional cuisines, such as Catalan, Galician or Murcian cuisines, all of which are very different from each other. Spanish cuisine as it is known outside of Spain usually consists of little more than paella, tortilla, tapas such as patatas bravas and a number of sausages such as chorizo.
In reality, however, there is a huge variety of different regional cuisines that derive their success mainly from the abundance of fresh products found in the country. Besides that, the Spanish population maintains its own kitchen, compared to other European countries there is a great preference for fresh production of high quality as opposed to, for example, frozen products or pre-packaged fruit and vegetables, which are hardly sold. Spain is the second largest consumer of fish and seafood in the world after Japan.
